A get away sounds so good right now! Well full disclosure, I was NOT a great cook when I married my husband 30 years ago. In fact when I look back at old pictures I know we were skinny because I could not make a decent meal if my life depended on it. Oh my, I have so many tales of dinners gone wrong to share with you! However, 30 years of practice and many, many failures later, I am happy to say I can tackle just about any dinner desired. Well we will have to enjoy the splendor of Tuscany through this sensational feast. Let's tackle this meal together.
This recipe is from Delish, as always I don't follow the recipe exact and you shouldn't either! The only way to make food your own is to experiment, but write down ALL changes you make to your creations so you know how to duplicate your masterpiece again later!
Additions this time... for this recipe I used an additional 1/2 cup chicken stock mainly because I wanted more sauce but not more heavy cream. I also used frozen spinach that I thoroughly squeezed the heck out of to get all the water out before adding to the pan. I just don't have access to fresh spinach all the time and frozen is just as good and full of flavor.
Additions I will try next time.... maybe some excellent olives for some underlying zip to the sauce.
